Mashed cauliflower Prep time 5 mins Cook time 15 mins Total time 20 mins Author: kiddieliciouskitchen.com Serves: 4 Ingredients 800 g/ 28 oz cauliflower 1 vegetable stock cube water 1 can (400 g/ 14 oz) butter beans 2 tbsp butter or olive oil salt, white pepper and garlic powder according to taste chives Instructions 1 Separate cauliflower into florets and cut in smaller chunks. 2 Put cauliflower and vegetable stock cube in a pot and add enough cold water to cover the vegetables. Cover with a lid and bring to a boil. Reduce heat to low and cook for about 10 minutes or until cauliflower is fork tender, then drain. 3 Add butter beans and butter or olive oil. Using a hand blender, process until smooth.
