Mashed Cauliflower 2 medium head cauliflower, trimmed and broken into florets 4 cups water 5 tablespoons of butter 1/4 - 1/2 cup of milk or cream salt and pepper to taste Bring the water to boil in a medium soup pot. Add a bit of salt and the cauliflower. Turn down to medium heat and continue to simmer until the cauliflower is tender. Transfer to mixer or mixing bowl. Add butter and 1/4 cup of milk/cream. Mash or mix until smooth, adding additional liquid if necessary. If you want less of the fat, you can always replace the milk/cream with the water that remains in the pot after boiling the cauliflower. Salt and pepper to taste.
