In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed. Have your child smoosh together the first five ingredients with a rubber spatula in a bowl until well blended. Chill 10 minutes. Turn out onto waxed paper and, using the paper as an aid, roll the butter into a log about the size of a nickel. Wrap tightly in a new piece of waxed paper and refrigerate 1 hour or longer. While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside. Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes. Meanwhile, melt butter in a small saucepan over medium heat.
